There are many stucco companies out there, so how do you know you are receiving the right service from an accredited professional?

If the contractor is a certified applicator he should be able to show you proper certification to prove that he has been sufficiently trained in the products he is using.   This is your first line of defense.   Further, ask for references and visit previous projects to review their workmanship and quality of work.
